These cookies are always a crowd-pleaser and I always get rave reviews from anyone who eats them. They are the perfect sweetness and just melt in your mouth. If you are someone who loves nuts they would be good with some crushed-up nuts and/or dried fruit. if you love chocolate you could drizzle some on top or dip the bottom of the cookie in chocolate. so many possibilities with these cookies, but they are amazing by themselves as well. Step-by-Step Instructions

First, we are going to gather our ingredients and utensils.

Now you are going to want to separate your 4 egg whites from the yolks and put the egg whites in the bowl along with 1/4 tsp salt.

Beat the egg whites and salt until it is foamy and you get a soft peak.

Now you are going to gradually add the 1 1/4 cups of sugar into the egg whites. Once all the sugar is beat into the egg whites add your 1/2tsp vanilla extract.

It should look like marshmallow cream and not foam now. Beat for a few more minutes so it thickens up.

Last you will need to fold in 3 cups of shredded coconut. If you are wanting to add any nuts or dried fruit add it in now.

Preheat oven to 325 degrees. scoop small balls onto the cookie sheet.

Cook your cookies for 15-20 minutes depending on the size of your cookies. You will want to make sure your cookies are golden brown all over.

Let cool…if you are planning on drizzling or dipping then in chocolate then go ahead and do that now and let chocolate harden.
