These almond thumbprint cookies are made almond shortbread cookies with jelly in the middle. These are simple and quick and only use 5 ingredients. You can put any kind of jelly in the middle. I usually put raspberry, marionberry, or blackberry. You can use one of these or your favorite kind of jelly. These cookies are so delicious with almond extract. I love the flavor of almond extract. Step-by-Step instructions
Let’s get out our ingredients and utensils.
First you want to beat 1C. butter. Then beat in 2/3C. sugar and 1/2tsp. almond extract together. Beat it in well.
once you have creamed the butter and sugar mixture add in the flour.
When mixing in flour it may be crumbly which is ok. you will smash it together so it sticks together.
Now you will make small calls and put them on a cookie sheet and flatten them a little.
now take your thumb and put your thumbprint in the middle and form the cookies as they might crumble a little.
once you have put a thumbprint in the middle of all your cookies you will take a 1/2tsp of jelly and put it in your whole.
I like to finish it off with sugar sprinkled on top but you don’t have to do that. You could wait till they’re cooked and drizzle some icing on top it makes them a little sweeter.
preheat oven to 350 degrees and cook them for 10-12 minutes until golden brown.
