Spring spice cake Flower cupcakes

Spice cake is one of my favorite substitutes for carrot cake. This is a cute flower cupcake recipe that is fun to make. All the different spices are so delicious in this cake. This particular recipe I am sharing with you has gone through many transitions. You can find the recipe here https://bakingmamalife.com/?page_id=91. This recipe actually started as a chocolate chip muffin recipe and me and my dad changed it to a crumble muffin and now I am changing it to a spice cake recipe and it turned out delicious! Not too sweet and the different spices are delicious although if you are wanting to be even bolder with the spices I would also add 1/2tsp of fresh ginger in it as well.

Spring Spice Flower Cupcakes Step-by-Step instructions

STEP 1

First we want to get out the ingredients and utensils.

STEP 2

You will want to cream your 6TBSP. soft butter, 2/3C. sugar, and 1tsp. vanilla in a medium bowl.

STEP 3

Add 2 eggs one at a time into the creamed mixture.

STEP 4

In a separate small bowl mix 1 1/3C. flour, 3/4tsp. baking powder, 3/4C. baking soda, 1/2tsp. salt, 1 1/2TBSP. cinnamon, 1/2tsp. nutmeg, and 1tsp. fresh ginger.

STEP 5

Now you will add in half the dry ingredients and then 1/3C. sour cream twice. Mix until all ingredients are combined.

STEP 6

Fill a 12 cupcake tin with the batter. I like to use foil cupcake liners for events/holidays so the pattern doesn’t get ruined by the oils in the cake.

I also really love using silicone cupcake forms for if there just for us at home. Its easier clean up then cleaning cooked on batter off the cupcake pan.

STEP 7

Bake your cupcakes at 350 degrees for 15-20 minutes. make sure a toothpick comes out clean. let cool.

Spring decorating step-by-step

Next, is the fun part…decorating!

first lets get out everything we need.

STPE 8

You are going to want to get a marshmallow out and you are going to cut it into 5 pieces with clean scissors.

STEP 9

Dip one sticky side into colored sugar sprinkles or colored sugar.

STEP 10

After you frost your cupcakes place your colored marshmallow petals in a circular pattern on your cupcake like a flower and put a candy coated chocolate piece in the middle.
